Momo masala and garam masala sit side by side on the shelf, and both are ground spice blends, so it is easy to assume they are interchangeable. They are not. Momo masala is made to season the filling of momo dumplings, while garam masala is a general warming blend for curries and rice dishes.

This guide explains the difference, when a swap works and how to season momo filling so it tastes the way it should.

What is momo masala?

Momo masala is a ready-made seasoning mix designed for dumpling filling. Recipes differ from brand to brand, but a typical blend leans on cumin, coriander, ginger, garlic and chilli, and some blends add timur for its citrusy tingle. The mix is built to be savoury and well balanced, so it can season minced meat or vegetables on its own.

Because every brand is different, read the ingredients and the directions on the pack before you start.

What is garam masala?

Garam masala is a warming blend from South Asian cooking. The exact mix varies by region and by cook, but it usually includes spices such as cumin, coriander, cardamom, cinnamon, cloves and black pepper. It is usually stirred in near the end of cooking, so the aroma stays bright.

It has no chilli-and-garlic backbone of its own, which is the main reason it does not behave like momo masala.

Can you swap momo masala for garam masala?

Sometimes, but the result will taste different. If you only have garam masala, add fresh grated ginger, garlic, chilli and salt to the filling alongside it, and use a light hand, since its clove and cinnamon notes can dominate a dumpling. Going the other way, momo masala in a curry works as a base seasoning but will not give the classic garam masala finish.

How to season momo filling

The method below is a common starting point. Always follow the quantity on your pack, as blends differ in strength.

  1. Mix the minced meat or finely chopped vegetables with grated onion, ginger and garlic.

  2. Add momo masala and salt according to the pack directions.

  3. Rest the filling for 20 to 30 minutes so the flavours settle.

  4. Taste a small cooked spoonful, adjust, then fold your momo.

A fresh dipping sauce completes the plate. Our guide to timur explains the tingly spice behind many Nepali momo dips.

Where to find them
